Ingredients
  • For the Larb
  • 2 lbs pastured ground pork (or turkey, or chicken...or beef...heck, use venison if you want)
  • 2 tbsp coconut oil
  • 4 cloves of garlic, minced
  • 1 inch knob of fresh ginger, grated
  • 8 oz mushrooms- any kind, sliced (I used button but shitake would be great)
  • 1 medium red onion, thinly sliced
  • sea salt and pepper
  • 1/4 cup coconut aminos (or soy sauce)
  • 2 tbsp fish sauce
  • juice of 2 limes- about 1/4 cup
  • 2 tbsp honey (like this)
  • 1 lb baby spinach (or greens of choice)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1 cup of diced tomatoes
  • For the Vinaigrette
  • 1/4 cup coconut aminos (or soy sauce)
  • 2 tbsp fish sauce
  • 1 tbsp sriracha (adjust this to your preference. This stuff is HOT)
  • juice of 1 lime
