  • 1/4 cup (2 oz, 55 ml) olive oil
  • 1 tsp vanilla
  • Grated zest from 2 large oranges (about 1/4 cup)
  • 2 Tbsp (1 oz, 30ml) dark rum
  • 3 1/4 cups (16 oz, 453g) all purpose flour
  • 1/4 cup (1.5 oz, 45g) corn meal
  • 1 1/2 cups (11.5 oz, 325 g) granulated sugar
  • 1 Tbsp baking powder
  • 1/2 tsp table salt
  • 1 Tbsp anise seeds
  • 2 cups (11 oz, 310 g) toasted almonds, roughly chopped into large chunks
  • 1/4 cup Demerara sugar for topping
