  • 2 large eggs plus 5 large egg yolks
  • 3/4 cup buttermilk
  • 1 tablespoon vanilla
  • Cream Cheese Frosting
  • 12 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 8 ounces (about 2 cups) powdered sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon fresh lemon juice
  • 1 (6-ounce) package frozen fresh coconut, thawed, for assembling the cake
