  • 1 pound baby potatoes
  • 3/4 pound diced butternut squash
  • 1 tablespoon light olive oil
  • kosher salt and ground black pepper
  • 3/4 pound brussels sprouts, trimmed and halved
  • 14 ounces smoked sausage (I used turkey) or kielbasa, sliced
  • cooked brown and wild rice medley, for serving (optional)
