Ingredients
  • 1-1/2 lb. boneless, skinless chicken thighs, trimmed and cut into 2-inch pieces or left whole
  • Kosher salt and freshly ground black pepper
  • 3 Tbs. olive oil
  • 2 medium or 1 large yellow onion, halved and thinly sliced lengthwise (about 4 cups)
  • 1 large clove garlic, peeled and quartered
  • 1 tsp. ras el hanout
  • 1/2 tsp. ground coriander
  • 1/8 tsp. ground cinnamon
  • 1/2 tsp. saffron threads
  • 2 cups chicken or vegetable broth; more as needed
  • 1/2 cup raisins
  • 1/4 cup dried apricots, halved lengthwise
  • 1-1/2 cups couscous
  • 1 oz. (2 Tbs.) unsalted butter
  • 1 15-oz. can chickpeas, drained and rinsed
  • 2/3 cup dried pitted dates, halved lengthwise
  • 1/2 cup toasted slivered almonds
  • 1/4 cup fresh cilantro, coarsely chopped
  • Lemon wedges, for serving
