  • 1 lb dried fava beans or lima beans – see NOTES below for how to soak beans
  • 2Tb olive oil
  • 1 large onion, finely minced
  • 3 garlic cloves, minced
  • 3 roma tomatoes, chopped
  • 1/2 bunch fresh cilantro, finely chopped
  • 2 tsp salt, fresh ground pepper
  • 6 cups chicken stock or vegetable broth (or water, because I’llbedamnedifI’mgoingoutintherainforstockIforgottomakeorbuy)
  • Baguette
  • Bag O'Salad (I don't mind going without greens for a day, but this goes nicely with a simple salad, if you want to pick up a bag of baby spinach and a bottle of dressing)
