  • 2 1/2 cups (625 mL) cake and pastry flour
  • 1 1/2 cups (375 mL) sugar, divided
  • 1 Tbsp (15 mL) baking powder
  • 1/2 tsp (2 mL) salt
  • 1 Tbsp (15 mL) finely grated lemon zest
  • 3/4 cup (175 mL) buttermilk
  • 1/3 cup (80 mL) vegetable oil
  • 1/4 cup (60 mL) lemon juice
  • 2 large eggs, separated
  • 1 1/2 tsp (7 mL) vanilla extract
  • Coconut Frosting
  • 3/4 cup (175 mL) unsalted butter, at room temperature
  • 4 - 6 cups (1-1.5 L) icing sugar, sifted
  • 6 Tbsp (90 mL) coconut milk
  • 1 tsp (5 mL) vanilla extract
  • 1/2 tsp (2 mL) coconut extract
