  • 1medium cucumber, peeled, seeded, and diced
  • 1/2green or yellow bell pepper, cored, seeded, and diced
  • 1/2red bell pepper, cored, seeded, and diced
  • 1small sweet onion, diced
  • 1clove garlic, rough chopped
  • 3tablespoonsreally good Spanish extra-virgin olive oil, plus 1 tablespoon for drizzling
  • 2tablespoonsred wine vinegar (or to taste)
  • Sea salt and freshly ground black pepper
  • 1tablespoon chopped fresh chives or scallion greens
