  • 1 (3 1⁄2-lb.) boneless pork shoulder (Boston butt)
  • 1 tablespoon kosher salt, divided
  • 3/4 teaspoon black pepper, divided
  • 1 tablespoon olive oil
  • 2 cups vertically sliced sweet onion (from 1 onion)
  • 2 tablespoons chopped garlic (from 4 to 5 garlic cloves)
  • 4 large carrots, peeled, cut into 2-inch pieces (about 3 cups)
  • 1 1/2 pounds celery root, peeled, cut into 2-inch pieces (about 3 cups)
  • 1 Honeycrisp apple, halved
  • 2 (12-oz.) bottles hard apple cider
  • 4 thyme sprigs
  • 1/2 cup water
  • 1/4 cup cornstarch
  • 1 (8-oz.) pkg. wide egg noodles, cooked according to pkg. directions
  • Fresh thyme leaves, for garnish
