A very, very flavorful grilled cheese sandwich loaded with bacon, avocado, grilled onions, and Colby Jack cheese on sourdough bread.
It’s National Grilled Cheese Month and out of all the specific food special days, this is one we can really get behind. While I don’t believe there is such a thing as a bad grilled cheese (short of it turning into a charred fire hazard), there is definitely such a thing as a perfectly grilled cheese sandwich. There are hundreds of ways to make a loaded grilled cheese. You can add strawberries, grapes, jalapenos, spinach (but why?!), pesto, basil, dried cranberries or apricots, pear or apple slices, chopped olives, pickle slices, sliced almonds, crushed walnuts, chocolate, yellow cheeses, blue cheeses, white cheeses…. You get the idea. You can even add fried cactus and I venture somewhere in the internet world, someone is trying them all and documenting it for us. So, with so many variations declaring one the perfect combination is a matter of taste and open to debate. However, what can make any variation into that night’s perfect grilled cheese has everything to do with the winning textures of slightly crunchy and very gooey. For that, use a high-quality cheese that melts nicely, butter both sides of your bread slices and grill on low heat.
Fair warning, once you load a grilled cheese, you may never go back. Plus this grilled cheese recipe still pairs deliciously well with the traditional cup of tomato soap.
Grilled Cheese Sandwich with Avocado, Bacon, and Onions
Loaded Grilled Cheese

– 2 slices sourdough bread
– 4 slices Colby Jack cheese
– 4 slices bacon
– 1/2 sweet onion, large
– 1/2 avocado, ripe
– 1 tbsp. butter, melted
– 1/2 tsp. garlic salt
– 1/2 tsp. salt
– 1 tsp. vegetable oil
1) Chop half onion into ¼” slices. Cut half avocado into ½” wedges. 2) Heat skillet on medium heat, add bacon. After 2 minutes, add onions and garlic salt to skillet with bacon and stir. 3) On separate pan, heat pan on medium low, add oil and sprinkle pan with salt. 4) Evenly spread melted butter on both sides of sourdough slices. Place slices on pan until lightly brown on one side, then flip and add cheese to both slices. 5) Place cooked bacon and browned onions on bread slice. Add avocado wedges. 6) Make into sandwich. Grill both sides evenly until cheese completely softened. Serve immediately.
