No Ham Left Behind

It’s official, spring has sprung here in the Midwest. Asparagus is in abundance, bulbs are popping up all over the place AND we hit 60° yesterday (who-hoo!). Now, I’m not sure about you and your household, but I have a ton of leftover ham from Easter Sunday. I have a beautiful ham hock awaiting a pot of soup in the freezer, while a couple of pounds of sliced ham are patiently waiting to be repurposed in the fridge. I’m sure I’m not the only one who refuses to let leftovers go to waste, therefor I thought it would be fun to share some recipes using leftover ham. Perhaps Easter and/or making a ham on Sunday wasn’t part of you past weekend, but not to worry! You could easily sub in Canadian bacon, regular bacon or prosciutto in place for any of these recipes. OR, do what I would do, and go get a ham on sale and cook that baby up.

First and foremost: The classic. The king. The beloved: split pea soup. You can’t have a leftover ham hock and not at least consider making split pea soup. Taste of Home’s old fashioned recipe is all that you need when making this simple but elegant soup. 

*If you do not have a ham hock, substitute 4 oz. of chopped bacon or ham in its place.* 

Check out Budget Savvy Diva’s recipe for mac and cheese with ham. Oh my GOODNESS, does this look decedent. This would also make a great freezer meal if you need to use up that ham ASAP and want to save it for a later date. Simply freeze the uncooked mac and cheese, take it out the morning you want to have it for dinner, and allow it to thaw completely before baking. Next, follow the recipe’s instructions for baking and there you have it, a quick and easy weeknight meal.

 Speaking of pasta, I can’t take my eyes off of Crunchy Creamy Sweet’s recipe for ham and bacon pasta carbonara. Start to finish, this recipe only takes 20 minutes. Frozen peas would be great in this recipe, if you have ’em. 

Now this has to be my favorite recipe on the list, monte cristo lasagna from Climbing Grier Mountain. I am a fool for monte cristos, and the idea of sandwiching it between layers of pasta with cheese and puff pastry just about made me fall of my chair.
