  • ​2 pound pork loin, cut into 1-inch cubes
  • ​1/4 cup plus 1 tablespoon olive oil, divided
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • ​1 teaspoon dried oregano
  • ​2 cloves garlic, minced
  • 1/2 cup water
  • ​Directions:
  • ​1. Combine 1/4 cup of olive oil, lemon juice, salt, pepper, oregano and garlic in a gallon storage bag or container. Mix well. Add cubed pork and allow to marinate in the refrigerator for 4-6 hours.
